One, Albert Einstein was considered Jewish because of his family's religious belief instead of some kind of hereditary strand which would be indictive of an ethnicity (reminder that around his time was the time of Nazi Germany). I already made a distinction between the semantical differences that you can make between a Jew and a Hebrew in my opening argument. If you want to say that Jews are simply defined as a religious group, you are welcome to, but to deny that there isn't an ethnicity associated with Judaism(IE, Hebrews) is inaccurate. What defines an ethnicity has most consistently a common national identity and culture. As you already pointed out, nearly all Hebrew have very similar genetic structures when compared to other middle eastern groups, thus it would be inaccurate to distinguish Jews as an ethnicity based on genetics at least in the context of other middle eastern populations. And since Hebrews are an ethnic group, you can't convert to them.

The first most definition of a Jew and the overall majority of the definitions listed do support the idea of Jews as an ethnic group. Look, this is just semantics, it's irrelevant whether you define the word "Jew" by religion or ethnicity. However, to say that there isn't an ethnic group connected or associated with Judaism is inaccurate. Today many ethnic groups are defined as associated with a particular religious sect. You have yet to address this point the last half dozen times I have made it, ethnicities can and do exist with religions.

The culture of Assyrians today has been defined by religion, with a mix of Syriac Christianity, Sunni Islam, and ancient Assyrian religion. All groups have had various admixtures with other groups, and no-one is claiming that modern Jews or any other groups are completely identical to their counterparts 1000 years ago. But there is most certainly an ethnic group associated with Judaism, from which most Jews can trace a common cultural, national, genetic(and thus historical), and linguistic root to. What you define as your identity is your choice. There is no "concrete" or "scientific" way to determine ethnicity apart from genetics(from which it is difficult to differentiate close groups from each other) and national identity. In both factors, Jews tend to share a closer genetic relationship with each other rather than their host populations. And Jews tend to have a common national identity, thus they are an ethnic group.
So there was no Greek national identity prior to their independence from the Ottoman Empire? Is there no Romani national identity in Europe? If national identity is based purely on the existence of a government from which people live, why are Tibetans today considered a separate national group from ethnic Han Chinese today? The fact of the matter is that national identity does not depend on your control of a piece of land. National identity is simply your open association with a particular social group that is determined through parentage and culture.
Pseudo-scientific approximations of ethnicity purely by physical appearance are a definite callback to the era of scientific racism prevalent in the 19th and 20th centuries, especially with practices such as comparing skull features.
Regardless of that fact, many ethnicities do have different physical appearances, there are blond Africans yet they are still African.
The fact of the matter is, Jews, tend to look closer to each other and other middle-eastern groups, rather than their host countries, specifically in Europe. This is evidenced by the close genetic similarity of Jews.
You posted pictures of Kaifeng Jews, who number 3,000 as proof of differing Jewish identities. Although they are not Hebrew by genetics, they still (presumably) carry a common Hebrew/Jewish identity and culture which distinguishes them from their host population.
Jews DO tend to look similar. And the vast majority of them look more similar than the pictures of Arabs I posted previously.
